The original recipe called for Highland Scotch. I didn't have Highland but used a Scotch from the Scottish Highlands... so it's like the same thing. The recipe also called for Pastis which is a licorice liqueur. Also didn't have that, but I did have Absinthe which was a perfect substitute. This is a complex drinks with smokey, pete notes from the Scotch and then nice warming fall flavors from the apple butter and maple syrup. Yum!
2 oz Highland Single Malt Scotch // 1 stp apple Butter // 1 oz Lemon Juice // .75 oz Maple Syrup // 1 Dash Pastis (or Absinthe) // Top with Hard Cider. Garnish with apple slice.
